Brunch At Home

It has been a busy few weeks and with one more weekend at home before heading on holiday these baked eggs were just what I needed.

I first attempted to make baked eggs at home a few weeks ago. Opting for chorizo and feta baked eggs the first time I discovered that this brunch dish was not only delicious but really simple to make. On this occasion I decided to go for red onion and goats cheese. I adore goats cheese but I know it’s not everyone’s favourite.

I chopped the onion up and popped it in a dish with a drizzle of olive oil. I softened the onion by popping it in the oven and then once softened I added the chopped tomatoes and the eggs. Then I sprinkled on a little salt and pepper and popped it in the oven to bake for fifteen minutes. I cannot stress enough how simple it was to make.

Saturday Evenings

I didn’t snap a picture of dinner as it was simply chicken goujons, crinkle cut chips and beans! After a busy week the goujons that we were meant to have midweek were about to go off. Being a foodie isn’t always about exciting meals. We eat like normal people too. Although, who knew the perfect drink pairing for chicken goujons was prosecco?

The Ivy (Edinburgh)

Finished off the week meeting up with our friends in Edinburgh to celebrate one of their birthdays. It was a lovely catch up, especially as we don’t see each other often due to all living in different places. The Ivy is beautiful inside and obviously take pride in their food presentation too. Sadly the quality of food and service didn’t meet our expectations.
